I am so excited to finally share my vision with you! It’s been in the pipeline for a very long time and it is finally happening. What a walk of faith this has been for us! Reconstruct, redesign and redecorate. That’s the vision God gave us over two years ago when we felt His confirmation to take the existing old red barn on our fixer-upper property and convert it into a place where health, and ultimately lives, can be changed forever – all under the roof of a tired barn that just needs new life breathed into it. We’ve been doing much of the work ourselves with the little money we had. It has been a family affair and as a team of five, we all continue to trust for the fulfillment of this vision.

One of the wonderful things I love doing is the monthly WIS TV segment with Dawndy Mercer Plank. I count it as such a privilege. If you would like to tune in, the segment is the third Tuesday evening of each month during the 7pm news.
Yesterday I showed the viewers how to use leftover veggies and turn them into delicious meals. Leftover oven baked veggies never to waste in our house.
The veggies I used for the quiche were oven roasted zucchini, red, orange and yellow peppers, red onion and garlic.
quiche.jpeg I made a quiche in a quiche dish with feta cheese and you could serve that with a simple green salad consisting of mixed greens, cucumber, green onions, snap peas and avocado with a light dressing. The individual quiches with baby spinach and honeyed goats cheese could be packed for lunch the next day or in the kids lunch boxes with freshly cut cucumber...

Can you believe that we are already into April? Time seems to be moving faster than ever! By this time, you may have already tried a detox or weight-loss program, or have thought of starting one. If so, I would really like to encourage you to remember that slow and steady wins the race! Remember there are no silver bullets - no quick fixes - so before you embark on any eating program, ask yourself if you can eat like that for the rest of your life. If the answer is no, then it's not the right one for you! If you are unhappy with your health or you've put on a few extra pounds, remember that change takes time. It happens by simply building new habits in your mind and doing them over and over again until they become ingrained in your life. Try to focus on adding the healthy foods, one small thing at a time! Focus on how far you have come and not how far you still have to go.

I was recently invited by Dr James Hébert of Cancer Prevention and Control Program at USC, to present a smoothie demonstration to him and some of his colleagues. It was such a privilege. I decided to make my Blueberry Kale ProPeas breakfast smoothie, as well as a green smoothie and a chocolate smoothie. They thoroughly enjoyed the smoothies. I felt relaxed and at ease as I made the smoothies and spoke about the health benefits of the ingredients that I was using in them. As I was standing before them, I realized how happy I was, doing what I did came so naturally. Sharing my love of healthy food and the message of good health is truly my passion – it allows me to demonstrate my tremendous love for people. What an honor!

I don’t know about your work week, but my mine is usually packed. I juggle my business in the mornings, and then rush home to be there for my children in order to get all three to their afterschool sports. Life is busy for us all.
I find that taking time in the beginning of the week to prepare two or even three meals for the week ahead can take so much pressure off of us.
This is also something you can do weekly or once a month. Simply soak a variety of beans overnight, rinse and then boil. Once they are ready simply add to freezer bags and freeze. Voila, you have beans that are sodium and BPA Free!
