salad:

2 cups cooked brown rice
1 large red bell pepper, diced
3 spring onions, finely sliced or 1 small red onion, finely diced
2 cups baby spinach, sliced
1 cup frozen green peas, defrosted and water drained off
One handful of roasted unsalted sunflower seeds
Small handful of cilantro, finely sliced
Himalayan pink salt, crushed black pepper and garlic and herb salt to taste
*Optional - 1 avocado, diced - squeeze over some fresh lemon juice.

Add all of the above ingredients in a pretty salad bowl. Add the salad dressing and stir through one last time.

This salad is also delicious made one day before serving.

dressing:

3 Tbsp extra virgin olive oil
2 Tbsp raw apple cider vinegar
1 Tbsp maple syrup
1 clove garlic
*Optional - a dash of dijon mustard 

Beat together in a mini blender until smooth.
