1 slighted heaped cup medjool dates - de-stoned
1 cup Bob’s Red Mill gluten free oats
1/2 cup unsweetened, shredded coconut
1/2 cup walnuts, pecans or almonds, slightly toasted and roughly chopped
Heaped 1/4 cup cooked pumpkin purée
1 tsp vanilla extract
2 1/4 tsp pumpkin spice
1 scoop AIM ProPeas protein powder - optional
1 Tablespoon zest from an organic orange - optional, but yummy!
Soak dates in boiling water for
5 minutes, discard water.
Add the dates to a food processor and blend until dates are smooth. Add the rest of the ingredients and hit the pulse button until a dough like consistency is formed but the mixture must not be too smooth.Roll in balls and roll in toasted coconut or toasted, finely chopped pecans or walnuts.
Add to a sealed container and store in fridge until cold.
