1/2 small red cabbage, finely shredded
1/2 small green cabbage, finely shredded
2 cucumbers, halved and finely sliced
1 small red onion, finely diced or 1/2 cup green onion, sliced
1 small jicama, peeled and grated
1 red pepper, de-seeded, diced or finely sliced
1 yellow pepper, de-seeded, diced or finely sliced
2 apples, peeled, de-seeded and grated
A thumbnail size piece of ginger, or more
Zest and juice of one lime
Zest and juice of one orange
1/2 cup cilantro, finely sliced
1/2 cup mint, finely sliced
2 cloves garlic, finely grated
2-4 Tablespoons cold-pressed olive oil - optional
1 handful unsweetened coconut chips
Seasoning: Himalayan pink salt and freshly crushed black pepper to taste

Mix all the ingredients (except for coconut chips) together in a big salad bowl, gently mixing up all the ingredients. Using your hands, crush the coconut chips over the salad just before serving. Enjoy!
