Chocolate Coconut Propea Truffles

INGREDIENTS:

  • 1 cup walnuts

  • 1/2 cup raw pumpkin seeds

  • 1/4 cup raw organic cocoa powder or carob powder

  • 1/4 cup ProPeas powder

  • 1 cup fresh pitted Mejool dates

  • Unsweetened coconut

METHOD:

  1. Soak dates in boiling water for 5 minutes and strain

  2. In a food processor, combine walnuts, pumpkin seeds, cocoa/carob powder, and ProPeas

  3. Process until combined and walnuts and pumpkin seeds have broken up

  4. Add dates and process again so until mixture starts coming together into a ball

  5. If mixture is too dry, add a teaspoon of the strained water

  6. Roll into balls and then into the coconut

  7. Keep refrigerated and enjoy for up to two weeks
