Serving up a Healthy Super Bowl

Posted on Feb 1, 2018

I must confess, that I grew up watching Rugby in South Africa and that your game of Football was brand new to me when we emigrated ten years ago. I have come to appreciate just how much Americans love their football tailgates!

Super Bowl Sunday is around the corner. It is estimated that anywhere from 2400 - 5000 calories can be eaten by folks indulging in their favorite football fare. Here are a few healthy additions I made for the television segment I did for WIS-TV this week to show viewers how to score with healthier snacks that can be just as delicious with fewer calories. We want to watch linebackers - not eat like them!

I always encourage folks to focus on adding more healthy foods to their menu’s. I made a delicious Polenta pizza with a basil pesto topped with veggies and sun-dried tomatoes. This proved to be a winner with all who tasted it! It can also be served with a fresh salad.

Introducing Lere's Barn

Posted on Nov 4, 2016

I am so excited to finally share my vision with you! It’s been in the pipeline for a very long time and it is finally happening. What a walk of faith this has been for us! Reconstruct, redesign and redecorate. That’s the vision God gave us over two years ago when we felt His confirmation to take the existing old red barn on our fixer-upper property and convert it into a place where health, and ultimately lives, can be changed forever – all under the roof of a tired barn that just needs new life breathed into it. We’ve been doing much of the work ourselves with the little money we had. It has been a family affair and as a team of five, we all continue to trust for the fulfillment of this vision.

It is an exciting road, but it’s a path that requires money. Leré is passionate about helping people change their eating lifestyles so they can be healthy and happier. As a nutrition...

Don't let your leftover veggies go to waste

Posted on Nov 4, 2016

One of the wonderful things I love doing is the monthly WIS TV segment with Dawndy Mercer Plank. I count it as such a privilege. If you would like to tune in, the segment is the third Tuesday evening of each month during the 7pm news.

Yesterday I showed the viewers how to use leftover veggies and turn them into delicious meals. Leftover oven baked veggies never to waste in our house.

The veggies I used for the quiche were oven roasted zucchini, red, orange and yellow peppers, red onion and garlic.

I made a quiche in a quiche dish with feta cheese and you could serve that with a simple green salad consisting of mixed greens, cucumber, green onions, snap peas and avocado with a light dressing. The individual quiches with baby spinach and honeyed goats cheese could be packed for lunch the next day or in the kids lunch boxes with freshly cut cucumber, carrots,...

Simple Guidelines to Get You Back on Track

Can you believe that we are already into April? Time seems to be moving faster than ever! By this time, you may have already tried a detox or weight-loss program, or have thought of starting one. If so, I would really like to encourage you to remember that slow and steady wins the race! Remember there are no silver bullets - no quick fixes - so before you embark on any eating program, ask yourself if you can eat like that for the rest of your life. If the answer is no, then it's not the right one for you! If you are unhappy with your health or you've put on a few extra pounds, remember that change takes time. It happens by simply building new habits in your mind and doing them over and over again until they become ingrained in your life. Try to focus on adding the healthy foods, one small thing at a time! Focus on how far you have come and not how far you still have to go.

Go Green and Stay Healthy

What do all these edible greens have in common? Chlorophyll. Chlorophyll is natures house cleaner. All greens have a cleansing effect on the body! Read about the health benefits of chlorophyll:

For those that find it difficult to eat greens, there is hope. My favorite whole food concentrates are from The AIM Companies. Green nutrition has been a hallmark of the AIM Companies since 1982. I have enjoyed my AIM Barley Life every day now since 1997. I will not go a day without it. If I am ever summoned to an island and can only take two things, I will take my Bible and my Barley Life! I benefit greatly from its alkalizing and anti-inflammatory properties. It really is a whole food that your body knows how to utilize. For those, young and old that are not crazy about the taste, there is yummy and super nutritious CoCoa Leaf Greens...
