Fall Kale Salad

SALAD INGREDIENTS:

  • 2 bunches fresh kale, sliced, de-stemmed

  • 2 apples, winesap or granny smith

  • 1 cup cranberries

  • 4 oz honey goats cheese or 1 avocado

  • 1 yellow or orange bell pepper, diced

  • DRESSING INGREDIENTS:

  • 3 tbsp olive oil

  • 2 tbsp apple cider vinegar

  • 1/2 tsp dijon mustard

  • 2 tsp honey or maple syrup.

  • 1/2 tsp himalayan salt

  • Freshly ground black pepper

  • Generous squeeze of fresh lemon

  • 1 cup cubed butternut squash, oven roasted, optional

METHOD:

  1. Mix dressing ingredients together until smooth and pour over kale

  2. Massage dressing into kale for 4-5 minutes

  3. Add other salad ingredients and season to taste
