Go Green Salad

SALAD INGREDIENTS:

  • 2 granny smith or golden delicious apples

  • 1 cup broccoli

  • 1 cup green beans

  • 1 cup mange tout/flat green peas

  • 1 small avocado, diced

  • 1/2 cup chickpeas/garbanzo beans

  • 1 handful of arugula/rocket

DRESSING INGREDIENTS:

  • 1/2 cup fat-free Greek yogurt or coconut milk Kefir if dairy intolerant

  • 2 tbsp olive oil

  • 2 tbsp white balsamic vinegar

METHOD:

  1. Toss all the salad ingredients together

  2. Mix together the dressing ingredients

  3. Pour dressing over salad and serve
