INGREDIENTS:

  • 2 cups sliced kale

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar or fresh lemon juice

  • 1 cup spinach, finely sliced

  • 1 cup thawed frozen peas or

  • 2-3 avocados, diced

  • 1 red bell pepper, diced

  • 1/2 red onion, finely diced

  • 1/2 cup olives, sliced

METHOD:

  1. Add 1 tablespoon of olive oil and 1 tablespoon of apple cider vinegar/fresh lemon juice to kale

  2. Massage for 5 minutes

  3. Combine with rest of ingredients

  4. Squeeze lemon juice over the salad

  5. Season with garlic and herb salt and coarsely ground black pepper
