No Bake Granola Bars

  • 1/2 cup raw almond butter or other nut butter (no sugar added)

  • 1/2 cup raw honey or coconut nectar

  • 1 cup crispy brown rice cereal

  • 1 cup unsweetened Bob’s Red Mill Muesli or ½ cup old fashioned oats and ½ cup raw sunflower seeds, sesame seeds and sliced almonds

  • 1/2 cup dried dates, chopped

  • 1/4 teaspoon salt

  • Coconut oil


  1. Put almond butter and honey over medium heat for 2-3 minutes, whisk to combine

  2. Combine cereal, muesli, almonds, dates, and salt in a bowl

  3. Add the mixture of almond butter and honey

  4. Stir well to combine

  5. Grease a 7-8 inch square baking dish with coconut oil and line with plastic wrap

  6. Spread the granola mixture evenly into the dish and cover with plastic wrap

  7. Refrigerate until set, overnight or at least one hour

  8. Once set, remove by lifting the edges of the plastic wrap out of the dish

  9. Peel off the plastic and cut bars to any size
