Sneak in the Veggies

Once I made dinner for the Dutch Fork High School girls tennis team. It was a one pot Mexican dish that called for ground chicken. I wanted to make it more nutritious, so I added grated butternut squash, zucchini and carrots to the ground chicken. I lightly sauteed the veggies in a little veggie broth and then added this to the chicken.

I want to encourage all moms out there to find creative ways to sneak veggies into your meals to make them more wholesome!
