Festive Energy Balls

Ingredients:

2 cups gluten-free old fashioned oats
1 scoop AIM ProPeas or plant-based protein powder
1/2 cup flax meal
1/2 cup organic cranberries or chopped dates
1/2 cup pecans or walnuts, finely chopped
1 cup peanut or almond butter
2/3 cup maple syrup
1 teaspoon cinnamon
2 teaspoons vanilla extract
2-3 Tablespoons melted coconut oil, if needed

Method:

Combine all the ingredients together in a bowl and form into 1" balls using hands.

Arrange the balls on a baking sheet and freeze for 1 hour.

Enjoy. Any leftover energy balls can be stored in a sealed glass container in the fridge until ready to eat.
