Simple Mustard Greens Salad

Salad Ingredients

  • 1 bunch of mustard greens, leaves stripped off the stalk and torn into pieces or sliced

  • 1/2 cup pomegranate arils

  • Optional : 1/4 cup toasted, sliced almonds

    Salad Dressing

  • 3 Tablespoons fresh lemon juice (half a small lemon)

  • 2 Tablespoons olive oil

  • 2 garlic cloves, peeled and zested

  • 1 Tablespoon coconut aminos - optional

  • 1 teaspoon maple syrup

  • 1/4 teaspoon salt

  • 3-4 cracks of black pepper

    Putting it All Together

  • Add the mustard greens to a bowl and set aside.

  • Add all the salad dressing ingredients into a mug and mix together with a spoon.

  • Pour over the greens and massage the dressing into the greens for about 2 minutes. Add the pomegranate arils and almonds and serve.

    *Optional:
    The pomegranate arils and almonds can be omitted and swapped out for 2 Tablespoons of nutritional yeast that is massaged into the greens with the salad dressing.

    * Don’t like mustard greens? Replace it with Kale.
