Butternut Cheese Sauce
The Best Sauce that isn’t Cheese
Wow your guests, your family, or just your own taste buds with this delicious and nutritious faux cheese sauce.
Ingredients
- 1 pound butternut squash, peeled, seeds removed and diced 
- 1 1/2 cups low sodium broth 
- 1 cup low-fat canned coconut milk 
- 1 teaspoon mustard 
- 1/8 cup nutritional yeast or 
- 1 cup vegan cheddar cheese (Miyoko’s or Violife) 
Putting It Together
- Add the butternut squash and the broth to a pot, cover with the lid and boil over medium heat until the butternut is soft. 
- Add coconut milk, mustard, and nutritional yeast. Season with pink salt and ground pepper. 
- Using a hand blender, blend until the sauce is smooth and now you can add 1 cup of cheese if not using the nutritional yeast. Stir until cheese is melted. 
- Pour over steamed cauliflower, broccoli, Brussel sprouts, or your favorite cooked pasta and sprinkle with paprika. Enjoy.
