Butternut Cheese Sauce

The Best Sauce that isn’t Cheese

Wow your guests, your family, or just your own taste buds with this delicious and nutritious faux cheese sauce.

Ingredients

  • 1 pound butternut squash, peeled, seeds removed and diced

  • 1 1/2 cups low sodium broth

  • 1 cup low-fat canned coconut milk

  • 1 teaspoon mustard 

  • 1/8 cup nutritional yeast or 

  • 1 cup vegan cheddar cheese (Miyoko’s or Violife)

Putting It Together

  1. Add the butternut squash and the broth to a pot, cover with the lid and boil over medium heat until the butternut is soft. 

  2. Add coconut milk, mustard, and nutritional yeast. Season with pink salt and ground pepper.

  3. Using a hand blender, blend until the sauce is smooth and now you can add 1 cup of cheese if not using the nutritional yeast. Stir until cheese is melted.

  4. Pour over steamed cauliflower, broccoli, Brussel sprouts, or your favorite cooked pasta and sprinkle with paprika. Enjoy.
