Pumpkin Chia Seed Pudding
Chia Seed Pudding
Ingredients
- 1 cup unsweetened almond or oat milk 
- 1 cup coconut yogurt 
- 1/2 cup canned pumpkin 
- 1/4 cup slightly heaped chia seeds 
- 1 teaspoon pumpkin spice 
- 1 Tablespoon vanilla extract 
- Pinch of salt 
Whisk all the ingredients together until smooth. Place in fridge overnight.
Apples with ‘Caramel’ Sauce
Ingredients
- 2 apples 
- 1/2 lemon 
- 3 Tablespoons raw almond butter 
- 1/4 cup maple syrup 
- 1 teaspoon almond extract 
Putting It Together
- Just before serving, remove the seeds and dice the apples 
- Squeeze the juice of 1/2 lemon over the apples. 
- Mix almond butter, almond extract, and maple syrup until smooth 
- Pour mixture over apples, covering the apples with the sauce. 
- In glass dessert bowls, add a heaped 1/2 cup of the pumpkin chia seed pudding and top with 1/4 cup of the ‘caramel’ apples. Sprinkle with toasted coconut or chopped walnuts or pecans.
