Pumpkin Chia Seed Pudding

Chia Seed Pudding

Ingredients

  • 1 cup unsweetened almond or oat milk

  • 1 cup coconut yogurt

  • 1/2 cup canned pumpkin 

  • 1/4 cup slightly heaped chia seeds

  • 1 teaspoon pumpkin spice

  • 1 Tablespoon vanilla extract

  • Pinch of salt 

Whisk all the ingredients together until smooth. Place in fridge overnight. 

Apples with ‘Caramel’ Sauce

Ingredients

  • 2 apples

  • 1/2 lemon

  • 3 Tablespoons raw almond butter

  • 1/4 cup maple syrup

  • 1 teaspoon almond extract

Putting It Together

  1. Just before serving, remove the seeds and dice the apples

  2. Squeeze the juice of 1/2 lemon over the apples. 

  3. Mix almond butter, almond extract, and maple syrup until smooth

  4. Pour mixture over apples, covering the apples with the sauce.

  5. In glass dessert bowls, add a heaped 1/2 cup of the pumpkin chia seed pudding and top with 1/4 cup of the ‘caramel’ apples. Sprinkle with toasted coconut or chopped walnuts or pecans.
