Date Balls

INGREDIENTS:

  • 1 cup oats

  • 1 cup unsweetened coconut

  • 1 cup de-stoned dates

  • 1 tsp raw honey

  • Finely grated lemon rind, optional

  • 1 tsp ground cinnamon, optional

  • Chopped pecans, optional

METHOD:

  1. Soak dates in boiling water for 20 minutes

  2. Strain and reserve water

  3. Blend dates until smooth

  4. Add all other ingredients and blend until well mixed

  5. Roll into balls and toss in coconut

  6. Place in a sealed container and store in freezer
