No Bake CoCo Bites

INGREDIENTS:

  • 2 Tbsp AIM Cocoa Leaf Greens or raw cocoa powder

  • 1 heaped scoop of ProPeas protein powder

  • 1 cup gluten-free old-fashioned oats

  • 1/4 cup raw honey or maple syrup

  • 1/4 cup walnuts or pecan nuts, finely chopped (hemp hearts for nut-free)

  • 1/2 cup peanut or almond butter

  • 2 tsp vanilla extract

  • 1 Tbsp chia seeds or ground flax

  • 2/3 cup unsweetened coconut flakes (fine)

  • 1-2 Tablespoons melted coconut oil

METHOD:

  1. In a large bowl, mix together all ingredients.

  2. Roll into small balls and roll into fine coconut.

  3. Store in glass container in fridge until ready to eat.

  4. Serve and enjoy.
