Brown Rice Salad

  • 2 cups cooked brown rice

  • 1 large red bell pepper, diced

  • 3 spring onions, finely sliced or 1 small red onion, finely diced

  • 2 cups baby spinach, sliced

  • 1 cup frozen green peas, defrosted and water drained off

  • One handful of roasted unsalted sunflower seeds

  • Small handful of cilantro, finely sliced

  • Himalayan pink salt, crushed black pepper and garlic and herb salt to taste

  • 1 diced avocado, optional

  • Fresh lemon juice, optional


  • 3 Tbsp extra virgin olive oil

  • 2 Tbsp raw apple cider vinegar

  • 1 Tbsp maple syrup

  • 1 clove garlic

  • A dash of dijon mustard, optional


  1. Combine all salad ingredients in salad bowl

  2. Beat together dressing ingredients in a mini blender until smooth

  3. Pour dressing over salad
