Pecan Date Balls

INGREDIENTS:

  • 2 cups medjool dates, de-stoned

  • 2 cups unsweetened shredded coconut

  • 2 cups gluten free oats

  • 1/2 cup toasted pecans or walnuts, coarsely chopped 

  • 1 tbsp cinnamon

  • 1 tsp ginger powder

  • 1/2 tsp nutmeg

  • 2 tbsp zested orange rind

  • 2 tsp zested lemon rind

METHOD:

  1. Soak dates in boiling water for 10 minutes

  2. Keep 1/8 cup date water, discard the rest

  3. Add the dates to a food processor and blend until smooth

  4. Add the oats, coconut, spices, orange and lemon rind

  5. Using the pulse button, blend until all ingredients are combined

  6. Add toasted pecans blending a couple of times

  7. Using your hands, roll the mixture into balls

  8. Roll balls into finely shredded coconut

  9. Place in a sealed contained in the fridge until ready to eat
