Red Lentil & Kale Soup

INGREDIENTS:

  • 1 white onion, diced

  • 2 carrots, diced

  • 2 celery sticks, diced

  • 2 garlic cloves, sliced

  • 1 Tbsp coconut or olive oil

  • 1 & 1/2 cups red lentils, rinsed

  • 5 cups of vegetable broth

  • 1 tsp yellow curry powder

  • Himalayan salt and coarsely ground black pepper to taste

  • 1 heaped cup kale, finely sliced

  • 1 can coconut milk, BPA Free

METHOD:

  1. Fry the onion, carrots, celery and garlic in a soup pot in oil for 5 minutes

  2. Add curry powder and sauté for another 2 minutes stirring well

  3. Add vegetable broth and lentils

  4. Bring to a low boil

  5. Cover with lid and cook for 20 minutes or until the lentils are tender

  6. Add coconut milk and sliced kale

  7. Season to taste and simmer for another 5-10 minutes

  8. Serve garnished with a sprig of fresh cilantro or flat-leafed parsley
