Spring Slaw

INGREDIENTS:

  • 1/2 small red cabbage, finely shredded

  • 1/2 small green cabbage, finely shredded

  • 2 cucumbers, halved and finely sliced

  • 1 small red onion, finely diced or 1/2 cup green onion, sliced

  • 1 small jicama, peeled and grated

  • 1 red pepper, de-seeded, diced or finely sliced

  • 1 yellow pepper, de-seeded, diced or finely sliced

  • 2 apples, peeled, de-seeded and grated

  • A thumbnail size piece of ginger

  • Zest and juice of one lime

  • Zest and juice of one orange

  • 1/2 cup cilantro, finely sliced

  • 1/2 cup mint, finely sliced

  • 2 cloves garlic, finely grated

  • 2-4 Tablespoons cold-pressed olive oil, optional

  • 1 handful unsweetened coconut chips

  • Himalayan pink salt and freshly crushed black pepper for seasoning

METHOD:

  1. Mix all the ingredients, except the coconut chips, together gently in a big salad bowl

  2. Crush the coconut chips by hand over the salad
